Tasty baked cod with a cheddar crust recipe

tasty cod and cheddar bakeWe are trying to eat through the freezer contents at the moment. I keep on unearthing strange unmarked parcels. I was once told to label everything, that I’d never remember what they were. That wise sage was right. Now I can’t even remember who it was.

Yesterday I found what transpired to be cod and concocted this recipe for tonight’s supper. It’s an off the cuff Cottage Smallholder invention. Absolutely scrummy and so much easier than the fish pie that I was planning. The Min Pins were a bit disappointed. Normally they force down our disasters.

The secret is the cheddar crust. This seals the top of the dish and helps to retain the moisture. Under the crisp top the fish was tender, succulent and full of flavour. And it was quick and easy. Perfect.

Tasty oven baked cod with a cheddar crust recipe (for 2-3 people)

Preheat oven – temp 220c (200c fan)

Ingredients:

  • 0.5 kilo of cod or haddock (unsmoked)
  • 125g of grated cheddar
  • 1 large egg
  • 2-3 tablespoonfuls of milk
  • Freshly ground black pepper
  • Quarter teaspoon of powdered mustard
  • 2 tablespoondfuls of chopped parsley
  • 1 lemon and parsley to garnish

Method:

  1. Lightly grease an oven proof dish.
  2. Line the dish with the fish.
  3. Add the milk and sprinkle with parsley and ground black pepper.
  4. Beat the egg and mix in the grated cheddar pour this over the fish.
  5. bake in the centre of a preheated oven for thirty minutes.
  6. Sprinkle with parsley and serve with lemon wedges and a good bottle of Muscadet.

  2. just cooked this,normally i,m very good in the kitchen but forgot to use fresh cod or at least defrost it and ended up eating sushi,will definatley try again though as the sauce tasted great.

    Thanks for the Boston Baked Beans idea.
    Cooked a nice curry using cod for a change.I had a jar of Korma sauce left over.Fried some cod for about 3 mins each side,after dipping in some seasoned flour.Added some cooked prawns to the curry sauce and poured over cod.
    Served with cubes of potato which I had parboiled then mixed with some mild curry powder and olive oil.Like Bombay potatoes but not as spicy.Baked them in oven for 30 mins.

    Alternative shepherds pie recipe.
    Very simple.Get some lardons or ham.Mix with baked beans and couple of drops of worcester sauce. Fill casserole dish with mixture.Top with potato or sweet potato mash then cheese on top of that.Bake for 25 mins.in medium oven.

    Hi,Your recipe inspired me to expand it.I peeled and sliced some potatoes,thinly.Parboiling them.I also fried some onions and mushrooms which I added to a tin of tomatoes.I had already poached the fish.I layered the potatoes first placing olive oil in the bottom of the dish.I then added the fish then the tomato mixture in alternate layers.Before adding the cheese on top I added some thinly sliced portions of butter.The seasoning I use in most dishes is Dunns River Everyday seasoning.I forgot about adding the egg to the cheese but the recipe was fine.I heated it up in the oven for 25 mins.and we all enjoyed the meal.Thanks.
