Embracing Magmix. Danny’s killer coleslaw recipe for foodies everywhere.

magimixSinceMagimix arrived by express post on September 14th 2007, Danny has watched it slice and chop and whiz. He has devoured meals that Magimix has rustled up with a flick of a switch and he has marvelled at the speed of the machine.

When Magimix assisted and produced a decent coleslaw he started asking questions.

“How does this machine operate? Which disk do I chose for the finest slicing?”
He waved the white plastic spatula about and looked a bit crazy.
“Do I press pulse or on?”

I had fumbled through the same jungle. Despite having the book to hand. Magimix is as cantankerous as The Contessa. You need to match the right tool for the job. Forget intuition.
“What exactly do you want to make?”
“Coleslaw.”

From my eyrie at the kitchen table I directed operations.

“1 small onion, 2 celery stalks (strings removed if they are moving on from fresh), a wedge of baby white cabbage (all sliced with the finest disk). 2 fat carrots peeled and ends removed (grated fine).”

He fed the vegetables through the funnel with the joy of a man who has discovered that his first great kitchen assistant cannot speak.

“How about the dressing?”

Danny mixed 2 tbsp of mayonnaise, 1 tsp of chilli sherry, 1 tsp pf walnut vinegar, 1 tsp of dried coriander and 2 tsp of creamed horseradish. He finally added a good twist of ground black pepper and a large pinch of salt.

Excellent.

D has since doubled the quantities, made this twice and demonstrated how to maintain a food processor without tears. Rinse immediately after use.

His award winning coleslaw (given by me) keeps well in the fridge for a couple of days and seems to go well with most vegetarian dishes. Hot or cold.

  3. I was looking around your blog for work related reasons in the office (athough have been here before for purely for pleasure) and laughed out loud reading this post – slightly blew apart the ‘I’m working really hard’ look I was going for!
    I was given a magimix for Christmas and agree with the comments here – revolutionary!
    Anyway, enough work, I’m going home to make coleslaw!

    The magimix has revolutionised my cooking.

    Well done on the larder front. I have only done half the larder as yet. Am working on a new system for the other half. Takes ages though, working in such a cramped space.

    There is something deeply satisfying about slicing and grating in a magimix- so fast, so even, so easy!
    Fiona- my larder is now tidy too. My prize find a pack of polenta best before end 2002-I nearly put it back out of sheer sentiment-you never know when an out-of-date pack of polenta may come in handy…perhaps I should try that recipe from earlier this week…
